I made this cake/bread this morning and am currently eating my second piece right now (shhh, don’t tell anyone). It is a really good cake. I’ve made a banana-mango bread before with white chocolate chips, but the only ingredient I had today was mango, so I had to find another recipe. I found this mango bread recipe (http://prettysimplesweet.com/mango-bread/) and thought it sounded delicious.
It is just a really basic, almost banana bread-like cake (but obviously there are no bananas), and it isn’t too unhealthy. The only change I made was that I used an 8×8 pan instead of a 9×5 loaf pan, so I decreased the cooking time to about 35 minutes. It turned out really moist and not overly sweet, which is good. I think for next time though, I’ll add more cinnamon and vanilla because I really like those flavours and they weren’t too strong in this cake. Also, I would add shredded coconut to make it a little more tropical.
But if you’re in the mood to do a little baking, I would definitely suggest this mango bread.
