Tonight I made lots of salads to go with dinner. I honestly just didn’t want to do much actual cooking, and salads are delicious and easy.
So the chickpea salad has corn kernels, cucumber and a lemony-honey dressing, with some basil and parsley too. And there’s no oil which means you can eat more without feeling bad haha.
The couscous one is just as simple. There is some yellow pepper, jalapeno, red onion with some pesto as a dressing. I also added a touch of honey for some sweetness.
