This meal actually started out as a salad from last night’s dinner (without the edamame). It was the kale, chopped apple and a simple dressing of olive oil, lemon juice, salt and pepper. There was quite a bit leftover and I didn’t want to eat the exact same thing again. So I just put everything in a pot and cooked it down. The kale got kind of wilted and the apples softened. I added a bit more salt and a touch of honey, along with the edamame for a protein boost.
This was my lunch but it could easily be a side dish for your dinner. I know it might all sound like a weird combination but it oddly all worked well together.
