Honestly, these cookies are magic. Well first of all, I guess they aren’t even really cookies, they’re meringues. Either way, they are my favourite treat to make during passover even though there are no special passover ingredients in them.
They are probably one of the easiest things to make but they technically take a while to make. You just need a little patience.
So you start off with a couple egg whites in a bowl and you beat them until peaks start to form (doesn’t take long if you have an electric mixer). Then you slowly add in some sugar and beat until super shiny and stiff. Add a pinch of salt, chocolate chips and chopped walnuts. You mix those things in gently. Once you have the ‘batter’, you’re ready to form your meringues.
It’s easiest if you take 2 spoons to do this. Use the first spoon to get some mixture and use the other spoon to scrape it off onto the baking pan. You just want to make small mounds on the tray and they don’t need to be too spaced out. Then pop them into a 350 degree oven and immediately TURN THE OVEN OFF. You have to let these cookies sit in the oven for about 8 hours so they ‘cook’ and dry out. I made these before going to bed last night so it was almost like a surprise when I woke up this morning.
Believe me when I say these are so good. They’re super light and crispy on the outside but slightly chewy on the inside. And the chocolate and nuts give it extra yumminess.
