If you want a filling and satisfying meal with none of the guilt, lettuce boats are a perfect way to go.
I made a “meat” filling with some soy meat, chopped water chestnuts and soy, sriracha, honey and a splash of water – cooked all that together.
On top of that, I made a little chickpea salad with mango, bell pepper, cucumber and a simple ginger sesame dressing (soy, ground ginger, rice vinegar, soy sauce, honey, sesame seeds).
Such a simple and easy meal. Hardest thing was all the chopping, and even that took like 10 minutes total.
