Lemony Blueberry Pie

Pie is everything. One of my favourite desserts. I cheated and used a store bought frozen pie shell for this but I think it’s easier than making pastry.

The filling had like 3-4 cups of blueberries which sounds like a lot but it really shrunk when it’s cooked. Mixed with the blueberries was corn starch, sugar, lemon zest, cinnamon and a pinch of salt. Mix all that together and pile it into the thawed crust.

If you’re making your own pastry, I would make a pretty lattice crust for the top but I made a crumble instead. It just had flour, oats, brown sugar, cinnamon and coconut oil. So easy.

Popped it in the oven and baked for about 45 minutes and let it cool for 10 minutes before serving. And as you can see, I put some ice cream on top. I love the hot and cold combo. This was such a yummy dessert.
